I’m baking and freezing for my Christmas party! These are easy to make and taste great!

What You’ll Need:

  • 1 cup + 2 tbsp all purpose flour
  • 1/2 tsp baking soda
  • 1 stick unsalted butter, softened.
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/4 tsp salt
  • 1 1/2 tsp vanilla
  • 1 cup chocolate chips
  • 3/4 cup crushed peppermint sticks, or 8-10 sticks.
  • Mixer
  • Cookie Sheets
  • Measuring Cups
  • Mixing Bowls

What You Do:

  1. Preheat oven to 375 degrees.
  2. In a large bowl, cream the butter (1 stick, softened.) and sugars (1/2 each brown and white) until nice and fluffy.
  3. Once fluffy, add in 1 egg, 1/4 tsp salt and 1 1/2 tsp vanilla. Mix well.
  4. In a separate bowl, measure out 1 cup + 2 tbsp of all purpose flour and 1/2 tsp of baking soda. Use a fork to mix these together well.
  5. Dump the flour mixture into the butter and sugar mixture. Beat until combined.
  6. Get out your peppermint sticks! Unwrap them and throw them in a freezer bag. Use a rolling pin or heavy bottomed pot to crush them. Don’t make dust, you’ll end up with very sticky cookies.
  7. Dump 1 cup of chocolate chips and your crushed peppermint sticks into the bowl with the cookie dough. You’re probably going to want to give up the mixer and move on to using a spatula to combine this now. Stir well.
  8. Place dollups on cookie sheet — the size is up to you.
  9. Cook for 10 minutes.

Five weeks ago today at precisely this time — well maybe not precisely this time I probably didn’t even know what time it was courtesy of my “happy medicine.” — I was laughing, having a good ole time (considering I was in an OR I was, seriously!) and the next thing I knew I woke up with a very large bandage on my foot. Five weeks later, I’m feeling fabulous! (well, not fabulous enough to do anything crazy, but I can wear regular shoes with ease and have even purchased a pair of heel — that I’m saving for when I am completely pain free). Now, that’s progress (in my book anyways).

There is something about rainy days that would make me rather curl up under the covers and sleep opposed to work, workout or do anything productive. Yesterday, when I was procrastinating, I found some much needed inspiration on Pinterest. I figured I’d share. Enjoy…while I attempt to be productive. Hopefully, a very productive post later!

On a sidenote, I’d just like to vent about my online LOFT shopping experience last night. I’m a huge LOFT fan. I love their clothes, shoe, accessories and not too mention I LOVE a great sale. 50 percent off everything is a great sale plus free shipping. The site wasn’t working for hours and then it worked — I was really excited! However, I tried to purchase about 15 items — all of which were not available! Why have them on the website if you can’t purchase them!
