Saturday afternoon boredom in the kitchen. I seem to have a surplus of peanut butter again. So I did some experimenting. Here it goes:

1/2 cup of plain granola
1/2 wheat germ
1 cup chocolate peanut butter
1 scoop of chocolate protein powder
1 egg

-mix ingredients thoroughly.
- roll into small balls
- refrigerate for at least 1/2 hour
- enjoy!

What do you get when you mix:

-1 sliced apple
-1 cup of protein powder (vanilla) I used vanilla GOtein
-1 cup of peanut butter

Delicious peanut butter cookies!

Simple toss all the ingredients in your food processor and blend til well mixed.

Place teaspoon sized drops on a cookie sheet and bake for 8 minutes at 350 degrees.

Yields 6 cookies

Delicious and Easy!
Ingredients
  • cooking spray
  • large jar of pasta sauce (about 50 oz.)
  • 1 can of diced tomatoes (14.5 oz.)
  • 1 can of condensed cheddar cheese soup
  • 2 teaspoons garlic, minced
  • 1 bag frozen cheese ravioli (25 oz.)
  • 1 cup grated Parmesan cheese
  • 1 cup grated mozzarella cheese
Instructions
  1. Spray slow cooker with cooking spray.
  2. In a separate bowl, combine pasta sauce, tomatoes, cheese soup, and garlic. Mix well.
  3. Spoon ⅓ of the sauce into the slow cooker, top with ⅓ of ravioli. Sprinkle with ⅓ cup of cheeses over ravioli. Repeat twice.
  4. Cover and cook on high for 3-4 hours.
  5. Serve warm.

Hello Strangers! After an over two month break from blogging, I’m back and committed to regular blogging and blog-reading in case anyone out there still remembers me! Between starting a new job(which by the way is going awesome), the holidays and a computer in need of some major TLC, I just haven’t had the time to blog, read and comment. Okay, I have been reading many blogs..on my Kindle…on the bus. I’ve kind of been a lurker lately.

Anyways, back to regular blogging, recipes and some New Years fitness routines….and of course some shopping…I have a major addiction to online shopping and I need to share some of my awesome finds with everyone.

Recipe for you:

Peppermint Oreo Cheesecake Cookies

yield: About 1 dozen cookies

prep time: 20 minutes

cook time: 12 to 15 minutes

total time: 35 minutes

INGREDIENTS:

½ cup unsalted butter, at room temperature
3 ounces cream cheese, at room temperature
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
½ cup mini chocolate chips
1 cup Oreo cookie crumbs

DIRECTIONS:

1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper and set aside.

2. In a mixing bowl, cream together the butter and cream cheese on medium speed until smooth and well-combined.

3. Add the sugar and vanilla extract and mix until the ingredients are well-combined. Add the flour and mix on low until the flour is incorporated. Stir in the mini chocolate chips with a rubber spatula.

4. Place the Oreo cookie crumbs in a small bowl. Scoop the cookies into about 1½ to 2″ balls and then roll in the cookie crumbs. Place the cookie balls on the baking sheet. Bake for 12 to 15 minutes, or until the edges are golden and the tops are slightly puffed.

5. Cool on the pan for 2 minutes before transferring to a wire rack to cool completely. Store in an airtight container.

Last Night’s Dinner

was delicious! Can I just say how much I love my crock pot? I received one as a birthday gift from my parents in May and haven’t stopped using it since. So easy and always prepares a delicious meal!

Brown Sugar and Garlic Chicken Recipe:

What You Need:

  • 1 large chick, cut into serving piecess
  • 1 cup packed brown sugar
  • 2/3 cup cider vinegar
  • 1/4 cup 7 up or Sprite (But I actually used Sierra Mist)
  • 2-3 Tbs. minced garlic
  • 2 Tbs. soy sauce
  • 1 tps. pepper

What You Do:

  • Place chicken in crock pot . Mix all remaining ingredients and pour over chicken. Cook on low for 6-8 hours.
  • Serve over rice or noodles. Can thicken the juice after cooking with a little cornstarch.

Diamond Donuts

A very easy bachelorette party treat that is no-bake, yet a huge hit!

This is a photo from Etsy, I forgot to photograph mine!

What you’ll need:

  • A box of mini-donuts.
  • Tooth picks
  • Tape or Glue (I found a small piece of clear tape to be much easier to work with than glue).
  • Diamond template
  • Card stock paper

What you do:

  1. Purchase the pink diamond template from Etsy (I love Etsy!) It was $9.99 but if you think about it you’ll have this template forever and can use it for all your friends and family. I got mine here.
  2. Print the template on colored card stock paper or use white paper and print the template in pink (or any other color of your choosing).
  3. Cut the “diamonds” out.
  4. Use clear glue or a small piece of clear tape to attach the diamond to a tooth pick.
  5. Stick the tooth pick through the center of the donut for a diamond look.

Pink Peanut Butter Kiss Cookies

Another bachelorette party favorite!

  • 48 HERSHEY’S HUGS striped chocolates (we are not aware of a leopard print Kiss yet)
  • 1/2 cup shortening
  • 3/4 cup Creamy Peanut Butter
  • 1/3 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 egg
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Granulated sugar
  • Pink gel food coloring (we used AmeriPro Soft Pink)
  • Extra sugar to roll your cookies in
1. Preheat your oven to 375 degrees. Unwrap your Hershey Hugs and set aside.
2. **OPTIONAL** You can roll your cookies in regular granulated sugar which will make them sparkle. Or you can dye your sugar pink and they will be pink and sparkly! It took us three attempts to get the best result, here it is:  Just add about 1/4 cup of sugar to a large Ziploc baggie. Drop in a few drops of food coloring, and massage into the sugar. The wet food coloring will make the sugar slightly wet and clumpy. Mix in a tsp. or two of cornstarch to solve this problem. Voila – pink sugar!
3. In a large mixing bowl, cream the shortening and peanut butter. Add 1/3 cup of granulated sugar and the brown sugar and beat until fluffy. Add the milk, egg and vanilla and mix until blended. At this point, add a few drops of food coloring until you reach your desired color.
4. In a separate bowl, stir together the flour, salt and baking soda. In batches, mix the flour mixture with the peanut butter mixture until combined. Do not overbeat.
5. Using a small cookie scoop, shape the dough into 1-inch balls and roll in the extra sugar. Place them on an ungreased baking sheet.
6. Bake cookies for 8-10 minutes. Remove from the oven and immediately press a Hershey Hug into the center of each cookie, the cookie’s edges will crack slightly. Remove from the cookie sheet and let cool on a wire rack.

Pretty in Pink Popcorn

Another easy bachelorette party treat!

Warning: I managed to turn my hands a little pink, so I’d strongly recommend wearing gloves!

3 packages of microwave popcorn
2 cups sugar
1/2 small box red Jell-O gelatin powder (I used watermelon)
1/2 cup water
1 Tbsp. butter
1 tsp. vanilla
1/4 tsp. baking soda

Put the popped popcorn in a large bowl, carefully picking out any unpopped kernels.

In a medium saucepan (with room for the mixture to at least double in size), bring the sugar, Jell-O, water and butter to a boil. Once fully boiling cook for 4 minutes without stirring, swirling the bowl occasionally. Remove from the heat and stir in the vanilla and soda. Pour over the popcorn and toss with tongs to coat completely. Spread out onto the baking sheets and bake, stirring once or twice, for an hour. Set aside to cool.

Fudge Recipe

Warning: You must have a major sweet tooth to enjoy this fudge, it’s insanely sweet!

I made this for a bachelorette party this past weekend and it was a major hit.

Ingredients
  • 2 cups + 2 Tbsp Betty Crocker Supermoist white or yellow cake mix (or any brand white or yellow cake mix)
  • 2 cups powdered sugar
  • 1/2 cup (1 stick) butter, cut into 4 pieces
  • 1/4 cup milk
  • 2/3 cup white chocolate chips
  • 1/2 cup rainbow sprinkles
Instructions
  1. Spray 8×8 baking pan with nonstick spray. Set aside.
  2. Mix together cake mix + powdered sugar in a large bowl. Add milk + butter (do not stir them in) and microwave for 2 minutes. Once done, immediately begin mixing everything together. The batter will be very thick. Fold in white chocolate + sprinkles. Stir gently. You do not want the sprinkles to leak their color too much!
  3. Spoon into prepared baking pan, making sure it is level and smooth at the top. Chill in the refrigerator for at least 1 hour. Cut into squares and enjoy
 Yields 36 pieces.
To make this a holiday friendly item…use the appropriate colored sprinkles.

What else is there to do when you have have a surplus of peanut butter and protein powder? Continue to make more PB and protein creations of course!

Here’s an easy-to-make no-bake PB protein ball recipe. I think my favorite part about this recipe is that there is no need to turn on the oven, which is a huge plus when it is nearly 100 degrees outside! Eating a refrigerated treat is so much more enjoyable! I’m beginning to feel like I live in Florida and not Pennsylvania.

What You’ll Need:

  • One scoop of protein powder (I opted for my NeoCell Belgian Chocolate; Love this stuff!)
  • 1/3 a cup of peanut butter (I went with PB Crave’s Cookie Nookie)
  • 1/4 cup of honey
  • 2 tablespoons of chocolate chips.

(Note: I was aiming for a cookie dough taste, you can use any PB you’d like!)

What You Do:

1. Toss all of your ingredients into a bowl.

2. Mix all ingredients until mixture is even. Dough will be sticky.

3. Roll dough into small balls.

4. Refrigerate for at least 3 hours to firm them up.

5. Enjoy!

Makes 6 protein balls…perfect for one or to share!
