Happy Monday!

Okay…so it’s not really a happy Monday. The weather has been winter-like and my Penguins have been eliminated from the playoffs by Philly! Yuck! This weekend was also packed full of baseball games. One win out of three games and I had to dress for winter and sit in the rain! Good thing one night was umbrella give-away night!

On the plus side, I’ve got a lot of fun and exciting things coming up next month:

  • my birthday (27 eek!!)
  • Chicago trip
  • Washington DC Trip
  • plenty of more baseball games (including club level seats)

As I am sitting here working, I’ve decided that my desk needs some major organization. And that’s when you turn to Pinterest. How brilliant are these ideas? Time to do some mimicking!

Hanging In There…

The Pens won! 10-3, they pummeled Philly! Despite the fact they still have a really long road ahead of them to win the series, it was finally good to see a win! A win makes today such a good day! This series has been crazy enough so far, so who knows what will actually happen! Pens in 7? Perhaps! It might be a stretch, but it’s not over til it’s over!

And I just got a random e-mail from Living Social stating I have a $10 credit in my account (I’ve never used Living Social before but I random $10 credit will definitely prompt me to use it)! I already have a Groupon addiction, so I likely don’t need a Living Social addiction as well.

I’m finding myself with absolutely nothing to say (just in case you couldn’t tell). Time for more work, frozen yogurt and then hot yoga. Sounds like quite the day to me!

It’s Sunday and I am desperately hoping for a Pittsburgh Penguins win in Philadelphia today! I’m not sure what those guys have been up to during the last two games, but they need to play the full 60 minutes today! I went to the first game and it was only enjoyable for the first 20 minutes! Going down 3-0 in Philly is really, really bad. So, Let’s Go Pens!!!

The other day, I was pleasantly surprised to receive a whole lot of nut butters in the mail courtesy of Artisana Organic Foods. Since I know I am not the first and probably won’t be the last blogger to receive this package I am going to keep my thoughts short and sweet. I received two full-sized jars and eight individual packets of nut butters with flavors including coconut, pecan walnut, cashew and more. Overall, I would definitely purchase this product. I enjoyed every flavor (don’t worry I haven’t eat it all yet). The Artisana products have turned into my new breakfast food. I put them on toast, bagels and waffles. I’d highly recommend them!

Greetings from the Pirate Game! Kidding…this is a previously scheduled post. I am probably chowing down on a hot dog and nachos and enjoying a Smirnoff Ice at the moment (for today this is not a healthy living blog)! Here’s to hoping the Pirates beat the Phillies!

Since I’m eating high-calorie, really bad for you stadium food, it is probably an excellent thing that a friend of mine convinced me to sign-up for two weeks of unlimited hot yoga ($25, yay for new student specials!). I’ve done yoga before and enjoyed it. All the stretching feels great, but I’m not going to lie: hot yoga scared me a little; fore more than one reason:

  1. I’ve only done yoga in a gym, not a yoga studio.
  2. I have a tendency to pass-out pretty easily.
  3. I used to be flexible.
  4. I’m accident prone!

Any tips, suggestions or experiences you’d like to share?

On Tuesday, I became the proud half owner of Pittsburgh Pirate tickets– I feel like a proud parent or something the way I said that. 81 Pirate games; yikes! Although, we will be selling (or trying to) sell half of them. If you follow baseball, you know the Pirates aren’t that great, which is probably why a season ticket =$4.98/game. Extremely cheap entertainment. At the recommendations of everyone who commented about TOMs, I will definitely be investing in a pair before the start of the season! Definitely black to go with the apparent black and gold that I will be living in this spring and summer. Thanks, you guys are awesome!

This week my newest addiction (aside from Pinterest and compulsive blog reading) has become Etsy.com, I could seriously spend hours on there. They have amazing stuff…nothing I so much need right now, but a whole lot of stuff I want!

Today’s Tryin’ It Out Thursday takes us back to the basics. A little review doesn’t hurt, plus everyone could use a little refresher course from time-to-time on form.

Yesterday was a cooking/baking/football kind of day! Even though my team isn’t in it, let me just say I am extremely glad the Packers are out of it (I still hold a grudge from last year’s Superbowl!). If your team didn’t make it yesterday, this may be of possible interest to you, How to Deal When Your Team Loses (another guest post from my sports writing gig).

Yesterday was probably the first time I spent some time in the kitchen since around the holidays…I think I spent too much time in the kitchen then and just needed a break! Anyways, here is what I got cooking/baking:

Baked Cheesy, Chicken and Broccoli Pasta

What you’ll need:

  • Casserole dish
  • 2 cups of pasta
  • 1.5 cups of steamed broccoli
  • 2 cooked, cut-up chicken breasts
  • 1.5 cups of marinara sauce
  • 2 cups of shredded cheese
  • 1/2 cup of Italian bread crumbs

What you’ll do:

  1. Preheat oven to 350 degrees.
  2. Spray your casserole dish with a non-stick cooking spray.
  3. Place 2 cups of pasta (you will need to boil them so they are slightly firm) into your casserole dish.
  4. Add your broccoli and chicken (prior to starting, I cooked my chicken in small pieces in oil and pepper in a frying pan) to the dish and mix.
  5. Then add in marinara sauce, a cup of shredded cheese and a few table spoons of bread crumbs to the mix. Stir thoroughly.
  6. Place in the oven for 25-30 minutes.
  7. With 10 minute remaining, top your dish with a cup of cheese and the remaining bread crumbs.
  8. Enjoy. (This dish also works great as leftovers, but you may need to add a little extra marinara sauce when you heat it up.)

And now for a snack. I find blogs a great place to find dinner/lunch/snack/dessert recipes. While browsing the snack section of pbfingers.com, I came across this recipe for peanut butter energy bites. They are delicious and easy-to-make. I am quite possibly the world’s slowest person in the kitchen and I managed to have the dough ready before my pasta became slightly firm in the above dish. Thanks Julie!

What you’ll need:

  • 1 cup of peanut butter
  • 1/2 cup of sugar
  • 1/2 cup of wheat germ
  • 1 egg

What you’ll do:

  1. Preheat oven to 350 degrees.
  2. Mix all of your ingredients together thoroughly in a mixing bowl. The dough is thick, but very tasty.
  3. Place the dough on a greased cookie sheet by the tablespoon.
  4. Bake for 10-12 minutes.

I accidentally ate the dough for the 12th bite, oops!

And guess what I did….I made a huge mess. Thank goodness for dishwashers!

I successfully managed to sleep the entire afternoon away (yesterday)…well from 11am til 2pm, which made today seem like an entirely wasted day. I normally can’t sleep past eight no matter how late I go to bed, which can get pretty awful if you go to bed really late.

The day, however, got much better with a trip to Red Lobster for a four course feast. And apparently the rest of the world had the same idea. A 40minute wait for a table for two seems a little steep! That meant a little time at the bar. Mudslides are incredible.

Then it was on to a four course meal, which lead to a bag full of leftovers!

  • potatoe bacon soup
  • a garden salad
  • cajun chicken alfredo
  • brownie!

Plus, you cannot forget about the free cheddar bay biscuits. I could seriously eat a whole basket of them by myself! Red Lobster should sell them in stores; I’d be a frequent buyer.

Sometimes I feel like I ready blogs like it is my job (wouldn’t that be an awesome job?). Last night I just discovered Blogilates.com. I love it (especially the name, I’ve got blogitness, she has blogilates. Great minds think a like right?). Anyways Cassey has some awesome workouts that I am very excited to try. She is also a a fashion designer. Her line is oGorgeous. I seriously think I fell in love with one of her gym bags last night. How adorable, yet functional is this bag? I want it! I think it would not only be a great gym bag, but I very functional bag to haul all of my work stuff around in when I decide to work outside of my house.

Happy Monday! Okay, well it is a very unhappy Monday if you live in Pittsburgh or are part of Steeler Nation regardless of where you live. My predictions were completely off. While it kind of sucks, it is what it is and there is always next year! In my lifetime, I’ve seen plenty of Steeler victories, many playoff runs, a couple of Superbowl wins and a couple of Superbowl losses, which honestly is more than a lot of fans of other teams can say. For now,  I am going to continue to eat my delicious “Here We Go Steelers” cookie cake.

Why I chose a career as a freelance journalist?

Recently, I’ve been getting some e-mails of people asking me why I choose this career and what made me want to leave a full-time position. These e-mails excite me! It’s great to know people are actually reading and are interested in my rather unique career path. While I could write a really, really long post (because trust me this was not a decision I made lightly), I’m going to break this down over a large number of posts for your reading pleasure (well, maybe not for pleasure. I’m more the less not looking to bore you as you read!).

I’ve always been told I was going to be a writer “when I grew up.” Who would have thought? Everyone was right. I guess when you are able to make an entire school of teachers cry when you submit an essay about your hero, you are destined to be a writer. Although, my goal is far from making people cry. I’m more about educating and informing people while having a little bit of fun along the way. I mainly right in health, fitness, nutrition and some sports, so it has been relatively easy to achieve my goal of educating people.

While everyone told me that I was going to be a journalist, I would say become a journalist was far from my goal. I started college as a writing major and ultimately switched to communication with a minor in writing. My ultimate goal was to work in the PR/marketing/corporate communications department of a professional sports team (more specifically the Steelers, Pirates or Penguins). Well, that didn’t happen. My dream job was a little too specific and I love Pittsburgh sports a little too much to have further expanded my search. My answer to why not look elsewhere was always, “Could you imagine me doing public relations for the Cleveland Browns? I don’t think so!” However, I honestly would have to say if the opportunity would ever present itself one of these days I’d be very likely to go for it.

Anyways, I finished my B.A. and was not having too much luck finding a job. I was not willing to relocate and I lacked the necessary experience to do almost every available job in the Pittsburgh area. Plus, the economy was not helping my cause. It eventually came down to the need for a full-time job. Some money is better than no money and a full-time office job beats working (and spending all of my money) in retail. My parents were insistent that I got a job with benefits. That’s what I did. I took a job working in a busy orthopaedic practice doing administrative work. This is a place I figured I would spend no money. It turns out I was wrong, injuries caused me to spend plenty of money here. Although, doctor’s appointments were very convenient. Who would have thought I’d spend so much money working in a doctor’s office? Maybe I should have stuck with retail. At least I’d have cute clothes to show for it instead of crutches, casts, and ugly black walking boots.

While I was here, I completed my Masters in Writing. I would have though a Master’s degree would have landed me a job. Unfortunately this wasn’t the case. I was getting slightly fed-up with the fact that I had a Master’s degree and was working a job that I could have essentially dropped out of high school and done. (Not going to lie, my ego was becoming a bit bruised!)

This is when the first of my freelance career occurred. I started doing some freelance work on the side in addition to my full-time job. I wrote a lot of education and finance articles. Not exactly the most exciting topic for me. I eventually decided I needed to find my niche in the freelance writing world. As a result, I opted to pursue a graduate certificate in Fitness and Wellness (I ended up liking this program so much I decided to complete a M.S. in Exercise Science and Health Promotion).

In 2010, I was off work (on short-term disability) recovering from my first foot surgery. It then hit me, I was making more money writing on the side part-time than I was working a full 40hour work week at a job I couldn’t stand. I finished off my time on short term disability and returned to work. Over the next few months, I worked to secure freelance positions. I needed to know I could make enough money to quite my job and work from home. Within a few months, I had quit my job and begun my freelance career. I had my family’s support. On the other hand, a lot of people thought I was crazy. The general consensus was why would you quit a full-time job in this economy? I should have been grateful to have a job.

I’ve been full-time freelance writing since August 1, 2010 and wouldn’t be happier with my decision. I couldn’t find my dream job, so I built my own dream job. How is that for a go-getter!

It’s finally here…Pittsburgh Steelers playoff day! The defending AFC conference champions (12-4) will begin their quest for a repeat on the road vs. the Denver Broncos (8-8) in the AFC Wild Card game. The last Denver appearance in the playoffs was in 2006 (following the 2005 season) vs. the Steelers. The Steelers came out on top 34-17 in this AFC title game. Denver is obviously looking to reverse the situation this year. Can they do it? Heck no! If anyone has watched the news in the Pittsburgh area this week, you’ve probably seen interviews with Bronco fans who are already throwing in the towel. My prediction, Steelers 24, Broncos 10.
