What do you get when you mix:

-1 sliced apple
-1 cup of protein powder (vanilla) I used vanilla GOtein
-1 cup of peanut butter

Delicious peanut butter cookies!

Simple toss all the ingredients in your food processor and blend til well mixed.

Place teaspoon sized drops on a cookie sheet and bake for 8 minutes at 350 degrees.

Yields 6 cookies

Is it just me or is an obsession with peanut butter an absolute must for healthy living bloggers? Yesterday I counted the number of peanut butter and nut butters in my kitchen….the grand total was 12 jars and 11 individual serving size packets. That’s a little bit crazy.

Where did all of this PB come from? Four delicious jars came courtesy of PB Crave (thank you so much Brandon!). When I came home from work, I was extremely excited to see a box with the letters PB plastered on it sitting on my doorstep. I am immediately dove into the box and was pleasantly surprised to find:

Being a huge peanut butter fan, I am immediately took the lids off and reached for a spoon. I first dove into cookie nookie. I love anything and everything with cookie dough and PB Crave did not disappoint. I followed up with some Choco Choco and it was equally as good. I saved the fruits for last and I do have to admit I was a little bit nervous. I’m not much of a fruit person, but I like to give all things PB a try. I opened the Coco Banana and was pleasantly surprised. The amount of banana flavoring was just right. Next it was time for Razzle Dazzle. Razzle Dazzle actually ended up being my favorite of the four. Why? PB&J sandwich is exactly what it reminded me of!
Overall, I love this product…it’s a great addition to my PB collection and I can’t wait to experiment more with it!

And it’s Monday (and April!).  Mondays are always filled with long to-do lists that make it seem like the work is never going to end. While I try not to wish away five days in a row, I’m really looking forward to the end of the week. As a result, I’m working like a mad-woman for the beginning of the week. I’m am completely stoked for the beginning of baseball season at the end of this week!

Last week I opened a box of waffles for breakfast only to realize that I didn’t have any  maple syrup, so I leaned towards the peanut butter and made sandwiches with my waffles and peanut butter. Since the middle of last week, I’ve devoured a box of waffles on my own. Tomorrow, I’ll be opening the blueberry waffles. It’s amazing how the simplest things can make a person so happy. Granola or jelly also make great additions to these sandwiches!

It’s been a long week. Thankfully, only a few hours of work and one meeting until my weekend begins! Yesterday was a long day of watching tragic events unfold on TV across the street from the hospital in which my sister was working in. Thoughts and prayers go out to all the victims of yesterdays shooting.

Instead of making a gloomy post, I want to do a things that make me smile/happy post. I swear next week will resume with healthy living posting…otherwise I may be needing to change the name of this blog! :-) .

This guy is likely to return to the ice this weekend! It’s been a long time coming for the second time!!

Happy Monday!

Yesterday, curiosity got the best of me and I tried it…I made peanut butter burgers. Honestly, I wasn’t that impressed! I love peanut butter and it goes great with a lot of things. Except, peanut butter and burgers may not be the world’s best combination, but that’s okay. At least I know now!

Looking for a challenge this morning? Not stuck in a dorm room, but my home office is close enough!

Despite the fact it’s Monday morning, I’m pretty excited for the week ahead!

Things to look forward to:

  • my first meeting with a client as a marketing consultant.
  • arrival of my Longchamp bag by the end of the day on Weds. (well, according to UPS)
  • leap day celebrations (bowling and breakfast for dinner lol, It’s an extra day, why not celebrate?)
  • getting my hair cut, it needs it badly!

Today, I successfully completed my first per diem assignment as a health promotion/biometric screener for a local company. It was a lot of fun. I worked a health education station. It was very interesting to see the various goals people have for themselves as far as health and fitness go. It is also interesting to see that everyone has a different view of healthy. Yet, I am amazed at the fact that the individuals who are healthy — according to BP, BMI and cholesterol levels are the most eager to make changes in their lives; opposed to those with dangerously high numbers. The one thing I did not like was having to get up at 4am. I am not much of a morning person. It’s currently 6pm and I feel like I’ve been up for days and could fall asleep at any given moment …..if I begin to ramble and not make sense that’s why!

Afterwards, I had an awesome lunch date at a local burger place. You could literally put whatever you wanted and as much as you wanted of any topping on your burger. I opted for a nice and spicy burger (and probably needed a toothbrush afterwards) with pepperjack cheese, BBQ sauce, jalopenos and onions. Plus, I had a birthday cake shake (amazing).

Anyways the point I am getting at is have you ever heard of peanut butter on a burger? I wanted so badly to try it, but figured this would be something I would be better off trying at home in case I didn’t like it! I love peanut butter, but I am not quite convinced that it belongs on a burger!

This is Pittsburgh, we get snow. Yet, it still amazes me how people automatically panic when they see even a snow flurry in the sky! As a result, I spent a whole lot of time yesterday in my car not moving fast at all. I got bored and hungry really quickly. I have stopped at the grocery store before hand to pick up a few things and when I say a few things…I mean a few things. I had a bag with a spaghetti squash, packet of Justin’s Organic Peanut Butter, Justin’s Organic Almond Butter, a MT. Dew, and a can of whipped cream. So, the obvious choice was to eat peanut butter out of a packet, right?

Today, I decided to put my spaghetti squash to use. This thing was massive and extremely difficult to cut, but I am happy to report that I still have all of my fingers! Cutting spaghetti squash might just be a great was of relieving stress and anger as long as you are careful in the process. Even with this rather large knife, I still could not cut through it. I opted to microwave it for five minutes to make the spaghetti squash easier to cut in half. Then, I put in in the oven on 375-degrees for 7 minutes. Topped it off with a little broccoli and pasta sauce…delicious!!

 

Then we have Chocolate Chip Oreo Cookies…extremely sweet, but good!

Have you ever accidentally dialed a wrong number and ended up calling some place you really, I mean really did not want to call? I went to call the billing office about a bill I received from a doctor’s visit; instead of dialing 1-888 I dialed 1-800 and got a recording that said “Talk to live girls now all over the country!” Major oops!

I swear I’ve spent half of my week so far on my phone and on hold. Not fun, I called one number to set up wage tax payments for my freelance work for 2012. The wait-time was 26 minutes. Not like I have anything better to do with my life or anything! I don’t even like talking on the phone. I’m more of a send a quick text and I’ll talk to you in-person kind of girl.

Now on to my latest food obsessions. I get on kicks were I could eat certain foods or snack foods over and over again.

Kellogg’s Krave Cereal – Chocolate Flavored.Multi-grain cereal with a chocolate center. Amazing. I could seriously snack on this stuff all day long. It makes a great snack while I’m sitting at my desk working all day. Although, sometimes I think I eat too much.

Lightly toasted peanut butter sandwiches with granola. Perfect for breakfast, lunch or a snack.

Happy Monday! Hope everyone has a productive week; like I very much need to have. Although, I did get a decent amount of work done last night during the Super Bowl. I love football, but I need to multitask during games when my team isn’t playing — I am anxiously awaiting the start of Steeler season.

Yesterday morning, I ultimately determined that peanut butter can be dangerous. I made myself  couple of peanut butter sandwiches with granola and toasted them slightly in my sandwich maker. I accidentally put too much peanut butter on the knife and decided I wasn’t going to let it go to waste. So, I licked a knife with peanut butter on it…genius right? It tasted great until I realized I had grazed the roof of my mouth. Awesome! My string of accidents/injuries continues…

But I did find this awesome Healthy Peanut Butter Ball recipe on Pinterest that I am very excited to try!

I came across this workout on Pinterest. I love it. I’ve always been one to use songs to get myself to run further or do sit-ups a little longer, so I found this to be extremely fitting.

Have You Tried PB2?

Have you heard of PB2? If you haven’t, PB2 is a powdered peanut butter that does through a process to remove approximately 85 percent of the fat calories minus the chemicals that are normally used to produce reduced-fat foods. The product is also preservative free and has no artificial flavorings.
